Cajun Shrimp Pasta with Sausage

Ingredients

  • 4 cups Penne Pasta, salt to taste 
  • 10 -12 pcs Shrimp, medium with tail-off
  • 2 Smoked Hot Sausage Links, I used Caroline
  • ½ Lime
  • ½ Cup Onion, chopped
  • ½ Red Bell Pepper, chopped
  • ½ Green Bell Pepper, chopped
  • ½ tsp Adobo Powder
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • tsp Black Pepper
  • tsp Paprika
  • tsp Cajun Seasoning
  • 1 tbsp Tomato Paste
  • 5 tbsp Water
  • 4 tbsp Grapeseed Oil or Vegetable

Instructions

  • Step 1: Clean your shrimp with cold water and ½ a lime. This helps with the fishy smell and it makes your shrimp absorb a nice flavor.
  • Step 2: Season your shrimp with adobo powder,  garlic powder, onion powder, black pepper, cajun seasoning,  and paprika.  Mix well and let it marinate for 15 - 20 minutes.
  • Step 3: In a large nonstick skillet over medium- heat add your oil and onions. I stir fry the onions for about 2 - 3 minutes.
  • Step 4: Mix 5 tbsp of water and tomato paste to the pan. Mix well for 1 minute on medium heat
  • Step 5: Add in your shrimp and let it cook for 5 -6 minutes on medium-low heat. Turn it on both sides to cook evenly.
  • Step 6: While your shrimp is cooking, lightly fry your sausage in another pan.
  • Step 7: Add your sausage to the shrimp and mix in well. I leave it on low heat for 2 -3 minutes.
  • Step 8: Add in your peppers and cook it for another 5 minutes on low heat.
